I woke up from a little cat nap craving for something slightly sweet. However, all I could find that was the slightest bit chocolatey and good — was a box of sugar-free, fat-free chocolate pudding. So what did I decide to do? I decided to make a pound cake from scratch and incorporate the chocolate pudding mix.

Here is the recipe:
2 1/2 cups white sugar
3/4 cup butter, softened
5 eggs
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 pinch salt
1 cup milk
1 chocolate pudding mix

1. Preheat oven to 350 degrees F (175 degrees C). Grease pan.
2. In a medium bowl, cream together the sugar and butter until smooth. Beat in the eggs, one at a time. Combine the flour, baking powder, baking soda and salt, add to the creamed mixture alternately with the milk. Add pudding mix (follow package directions). Stir until just blended, then pour into the prepared pan.
3. Bake for 20 to 25 minutes in the preheated oven. Cake is done when a toothpick inserted, comes out clean. Cool before removing from pan.
